Creamed Chicken Thighs

(The rich version is to add 2 tbsp of whipping cream to the water; the healthier one is adding some beer.)

Ingredients:     (About 5 servings)

  • 2 packs of 4 chicken thighs each (please, take away the skin first)
  • 2-3 tbsp. whipping cream added to 1 ½ cup of water (OR: 1 bottle of beer, preferably lager, and no water - whichever version you choose, but it should be either /or)
  • 2-3 tbsp. butter (cut in tiny cubes/pieces)
  •  1 inch-thick slice of Velveeta cheese (sliced in small cubes)
  • some salt
  • some black pepper
  • some grated Parmesan cheese to sprinkle on top

Directions for preparation:

  • Take a glass/metal cooking pan and, if you decide to go for the richer version, pour the water mixed with the whipping cream on the bottom (we seem to love both versions but I would rather go for the cream one , shame on me!)

  • Then add the butter, cut in tiny pieces, add the Velveeta cheese, sliced in small cubes, and add the seasonings: some salt, some black pepper, some of our favorite ones ("Spice Islands" garlic-and-herb bread dipping spices adjustable grinder - it turned out to do magic with practically an food). Mind you, the Velveeta will give a yellowish color to the final looks of the sauce.

  • Roll around the chicken thighs in this “sauce” before cooking them, so they become well soaked.

  • Finally, sprinkle some Parmesan cheese (or Parmesan and Romano mix) on top.
Convection bake on 420*F (about 210 *C) for about 50-60 min, covered with aluminum foil – you have to take it out once, at about half the time, to roll the chicken pieces over once again, so they get evenly roasted and have sauce on both sides. Sprinkle with some more Parmesan, and keep on cooking until ready.
  • It usually takes me about 70 min total, from start to finish but it all depends on your oven.


It makes the perfect lazy dish for a busy mum – you put everything at once and then work on your computer until the timer beeps for the first turn. Then, it goes the same until the final beeps for the ready dish.
